Dunedin Craft Distillers is the first distillery in Aotearoa New Zealand to produce hand-crafted Gin and Vodka from surplus bread and bakery products that would otherwise go to waste.

Our Silver Medal winning base alcohol - we call it Naked Spirit - is unique and delicious. Everything from sliced white, to ciabatta, croissants, donuts and scones goes into our brewers mash. Ninety percent of our mash bill is bakery surplus and the remaining ten percent is malted barley from Gladfield Malt in Canterbury. After fermentation, distillation and rectification, the equivalent of around three loaves of bread goes into every 750ml bottle. In our first year of commercial operation, we have upcycled more than 3.5 tonnes of bread and bakery surplus.

We currently offer cellar door, online and Otago Farmers Market sales.
