As part of the Matariki Bay of Islands festival, Jimmy Cooks Kiwi Kitchen located inside the Copthorne Hotel and Resort in Waitangi are serving up a special Matariki inspired dish.
Chef Jessie Jaspal grew up in a big family all over Northland and moved to the Bay of Islands in 2014. From July 2nd through until July 10th, every evening from 6pm - 8.30pm he will be serving a Beef Brisket Boil Up with carrots, kūmara, pumpkin, potato, watercress and doughboys - served with a slice of Rēwena Bread.
